Pecan Granola

Pecan Granola

INGREDIENTS

1/2 cup butter
1/2 cup maple syrup (100% real)
1/4 cup brown sugar (light or dark)
2 tbsp molasses
1 tsp vanilla extract
1 cup Bergeron pecans
3 cups old-fashioned oats
1/2 cup coconut (sweetened)
1 tsp salt
1 tsp pumpkin pie spice
1 tsp ground cinnamon


DIRECTIONS

1. Preheat oven to 350 F and line a baking sheet with parchment paper.

2. Melt butter in a small pot on the stove. Remove from heat once melted and add maple syrup, brown sugar, molasses and vanilla extract. Stir until sugar melts and everything is fully mixed. Toss pecans in butter/sugar mixture.

3. In a large mixing bowl, mix oats, coconut, salt, pumpkin spice and cinnamon. Pour pecan mixture over oats mixture and stir well, until fully mixed.

4. Spread onto the prepared baking sheet and bake for 30 minutes, tossing every 15 minutes. After tossing the second time, put granola back in the oven for about 10 minutes or until golden brown. Let cool and enjoy!
