Traditional Pralines


  • 1 ½ cups white sugar
  • ¾ cup brown sugar packed 
  • ½ stick butter or margarine
  • A pinch of salt
  • ½ cup evaporated milk
  • 1 teaspoon vanilla
  • 2 cups whole pecans


  1. Cook sugar, salt, and milk until it comes to a rolling boil.
  2. Add butter and let remain on fire until butter has completely melted.
  3. Remove from fire and beat until it begins to thicken.
  4. Add nuts and vanilla and drop by teaspoon on wax paper. If it gets too hard to drop, return to fire and remelt.
