INGREDIENTS
- 3 cups sugar
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1 ¼ cups oil
- 2 cups flour
- 1 teaspoon salt
- 4 eggs
- 3 cups carrots, finely grated
- 1 teaspoon butter extract
- 1 teaspoon nutmeg
FROSTING
- 1 lb. powdered sugar
- 1 stick oleo
- 8 oz package cream cheese
- 1 teaspoon vanilla
- 1 cup chopped pecans
DIRECTIONS
- Beat oil, eggs, and sugar.
- Add soda, cinnamon, nutmeg, salt, and flour. Beat.
- Add carrots and extract.
- Bake in 3 cake pans at 350 degrees for 30-35 minutes.
- To make frosting: Mix all ingredients together. Makes enough for filling and icing.
