Carrot Pecan Cake

Ingredients

3 cups sugar
2 teaspoons soda
2 traspoons cinnamon
1 ¼ cups oil
2 cups flour
1 teaspoon salt
4 eggs
3 cups carrots, finely grated
1 teaspoon butter extract
1 teaspoon nutmeg



Icing

1 lb. powdered sugar
1 stick oleo
1 8-oz package cream cheese
1 teaspoon vanilla
1 cup chopped pecans
Mix all ingredients together. Makes enough for filling and icing.


Directions

  1. Beat oil, eggs, and sugar.
  2. Add soda, cinnamon, nutmeg, salt, and flour. Beat.
  3. Add carrots and extract.
  4. Bake in 3 cake pans at 350 degrees for 30-35 minutes.
