Carrot Pecan Cake

INGREDIENTS

  • 3 cups sugar
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 ¼ cups oil
  • 2 cups flour
  • 1 teaspoon salt
  • 4 eggs
  • 3 cups carrots, finely grated
  • 1 teaspoon butter extract
  • 1 teaspoon nutmeg

FROSTING

  • 1 lb. powdered sugar
  • 1 stick oleo
  • 8 oz package cream cheese
  • 1 teaspoon vanilla
  • 1 cup chopped pecans

DIRECTIONS

  1. Beat oil, eggs, and sugar.
  2. Add soda, cinnamon, nutmeg, salt, and flour. Beat.
  3. Add carrots and extract.
  4. Bake in 3 cake pans at 350 degrees for 30-35 minutes.
  5. To make frosting: Mix all ingredients together. Makes enough for filling and icing.
